Overview
Albert-Marquis Hospitality Group is growing, and we're looking for driven, detail-oriented culinary professionals to join our team. Our restaurants—Table 128 and Hugo's—are built on craftsmanship, consistency, and genuine hospitality. Whether it's a wood-fired pizza shaped by hand at Hugo's or a seasonal tasting menu course at Table 128, our culinary team plays a central role in delivering an exceptional guest experience.

What You'll Do
- Execute menu items with precision, consistency, and attention to detail.
- Support daily mise en place: chopping, slicing, marinating, prepping produce, proteins, and sauces.
- Maintain an organized, clean, and efficient workstation throughout service.
- Safely operate kitchen equipment, knives, and tools according to training and standards.
- Work collaboratively with the culinary team to ensure smooth, timely service—especially during peak hours.
- Uphold all food safety and sanitation procedures, including proper product rotation and storage.
- Cross-train between stations, including the hot line and wood-burning oven (Hugo's).
- Assist with off-site and in-house catering events as needed, executing dishes to brand standards and accommodating dietary needs.
- Contribute to onboarding and training new team members, sharing best practices and supporting a strong kitchen culture.
What You Bring
- Previous experience in a professional kitchen or food-service environment is required.
- Solid foundational culinary skills—including proper knife handling and preparation techniques.
- Ability to work efficiently under pressure while maintaining accuracy and composure.
- A teamwork-driven mindset: reliable, communicative, and supportive of your fellow cooks and servers.
- Willingness to learn new techniques, recipes, and systems as menus evolve seasonally.
- Experience with high-volume service, wood-fired ovens, or catering is a plus (but not required).
