Job Overview

The First Cook is responsible for preparing meals according to established recipes, portion guidelines, and quality standards. This role helps oversee kitchen operations for assigned sections, ensures efficient service during peak periods, and supports cost control by minimizing waste.

Duties and Responsibilities
  • Prepare meals for assigned sections (restaurant, outlets, banquets, etc.) ensuring high quality and timely presentation.

  • Coordinate smooth service at the pass and ensure proper food pick-up and plating standards.

  • Organize daily preparation for cooks and restaurant service; supervise line set-up and food prep.

  • Monitor food usage and control waste within assigned section(s).

  • Advise supervisor of low inventory items and assist with ordering, receiving, and inventory counts as required.

  • Maintain sanitation and cleanliness standards that meet or exceed local Health Board and hotel requirements.

  • Report unsafe or malfunctioning equipment immediately to supervisor.

  • Assist in training and mentoring kitchen staff; ensure assigned duties are completed during each shift.

  • Promote teamwork and quality service through communication and coordination with Sales & Marketing, Catering, Banquets, Outlets, Maintenance, and Guest Services.

  • Occasionally interact directly with guests to ensure satisfaction.

  • Perform duties with minimal supervision and demonstrate strong leadership in the kitchen.

  • Assist with dishwashing or other kitchen duties as needed.

  • Support Cooks I and II when required.

  • Perform other duties as assigned while following all Company and Marriott Brand Standards.

Qualifications and Requirements
  • High School diploma or equivalent.

  • Minimum 2 years of food preparation experience or equivalent combination of education and experience.

  • Culinary certification or apprenticeship preferred; Red Seal Certification considered an asset.

  • Strong knowledge of food preparation techniques, safety, and sanitation standards.

  • Ability to work independently and lead within a team environment.

Physical Requirements
  • Ability to lift and carry items weighing up to 50 pounds.

  • Ability to remain standing for extended periods.

  • Frequent movement within the kitchen and F&B service areas.

  • Handling food, equipment, utensils, and kitchen tools.

  • Frequent bending, stooping, and kneeling.

Other
  • Strong written and verbal communication skills when interacting with cooks, service staff, and occasionally guests.

  • Reading and writing skills are utilized when following recipes, assisting with scheduling, and maintaining inventory records.

  • Strong problem-solving and reasoning abilities.

  • Basic mathematical skills including percentages, quantities, food cost calculations, and variances.

  • Valid food handler certification and any required provincial certifications.

  • Alcohol awareness certification as required by provincial regulations.

  • May be required to work nights, weekends, and holidays.

  • Work Area: Main Kitchen and all F&B service areas.

Health and Safety
  • Follow safe work procedures outlined in departmental policies, including proper use of personal protective equipment.

  • Comply with Occupational Health & Safety regulations in accordance with the Occupational Health and Safety Act and Ministry of Labour.

  • Report all injuries or illnesses immediately to a supervisor or manager.

  • Participate in Joint Health and Safety initiatives and bring forward concerns to the committee.
