Position Summary:
The Assistant Food & Beverage Operations Manager reports directly to the Senior Food & Beverage Manager and supports the overall leadership, operational execution, compliance, and financial performance of food and beverage operations across the property. This role amalgamates responsibilities across Quick Service Restaurants (QSR), licensed franchise outlets, room service, and beverage operations, within a high-volume, 24-hour casino environment.
Key Accountabilities:
Operational Leadership & Guest Experience
- Support the leadership and daily operations of QSR, licensed franchise outlets, room service, bars, lounges, and service bars.
- Ensure all outlets are clean, safe, staffed, and guest-ready through frequent store and floor walks.
- Maintain consistent, high-quality guest experiences.
- Support execution of menus, promotions, and programs.
Brand Standards, Compliance & Risk Management
- Ensure compliance with AGCO, Smart Serve, food safety, and brand standards.
- Manage guest intoxication, refusals, and incidents.
- Maintain audit readiness.
Financial Management & Controls
- Support budgets, forecasts, labor deployment, and cost controls.
- Monitor sales, margins, and inventory.
Team Leadership & Development
- Coach and develop supervisors and teams.
- Support recruiting, training, and scheduling.
- Partner with HR in a unionized environment.
Health, Safety & Continuous Improvement
- Ensure health, safety, and food safety compliance.
- Support KPIs, SOPs, and process improvements
Education and Qualifications:
- 5+ years of leadership experience in high-volume bar, hospitality, or multi-venue operations.
- Experience in unionized environments is strongly preferred.
- Strong financial acumen (labor, COS, inventory, forecasting).
- Proven ability to lead large, multi-shift teams.
- Deep knowledge of responsible alcohol service and regulatory compliance.
- Strong communication, coaching, and organizational skills.
- Customer orientation – Commitment to delivering exceptional guest experiences; proactive in addressing guest concerns; ability to adapt quickly in a fast‑paced, multi‑outlet environment.
