Food Cost Control Coordinator- Temporary Full-Time

    Summary Statement:

    This position is responsible for monitoring and
    controlling raw food costs through comprehensive oversight of both kitchen
    production and cottage-level meal service operations. The primary focus is on
    portion control verification, inventory management, identifying wastage and
    over-ordering patterns, and ensuring accountability throughout the food service
    system. All findings and activities are documented in regular reports to
    support cost control and operational excellence.

    External Contacts: Delivery Personnel,
    Vendors, External Contractors

    Key Responsibility Areas :

    Kitchen Production Monitoring: 

         ·      Monitor kitchen production
    quantities to ensure alignment with resident counts, menu specifications, and
    cottage-level adjustment

         ·      Observe and document kitchen
    practices to identify potential waste, over-production, or inefficiencies

         ·      Review and track food sent from
    kitchen to cottages against production records

         ·       Document all kitchen-level
    observations in written reports

     Cottage Meal Service Monitoring

         ·    Monitor breakfast preparation on cottages to ensure proper portioning
    and minimize was   

         ·      Verify that meals received from the kitchen match the quantities sent and what is required on the cottage.

         ·     Observe and document meal service practices to identify wastage,
    over-ordering, or consumption patterns

         ·      Work with cottage staff to reinforce proper serving sizes and meal
    distribution procedures

    ·     Document all cottage-level meal service observations in written reports

    Cottage Pantry & Snack Management

    · Oversee cottage pantry ordering and stocking to prevent over-ordering
    and reduce waste

    · Conduct regular cottage pantry audits to identify overstocking, expired
    items, and  consumption patterns

    · Monitor snack costs and consumption patterns across all cottage areas

    · Work with clinical and hospitality teams to optimize cottage grocery
    order lists based on actual resident needs

    · Assemble and allocate grocery orders (based on PAR levels) for
    Hospitality to collect and distribute to the designated cottages.

    · Ensure pantry and refrigerator supplies are properly managed and stored
    while maintaining  resident access and
    choice

    · Document all pantry audit findings and consumption patterns in written
    reports

    Reporting
    & Documentation

    · ·       Prepare reports documenting
    all monitoring activities, observations, and findings

  • Maintain accurate records and logs of inventory, wastage, consumption, and cost control initiatives
  • Provide regular detailed
    reports to General Manager on cost control effectiveness and areas requiring
    attention
  • Training and Administration: 

  • Attends educational
    workshops to inform team on trends and advancements in food Inventory and
    supply
  • Participates in various committees and
    meetings providing advice/ input
  • Health & Safety: 

  • Ensure
    compliance with food safety regulations and infection control protocols in
    kitchen and cottage areas
  • Monitor
    proper food storage temperatures and practices
  • Identify
    and document expired or compromised food items
  • Support
    preparation for regulatory inspections and audits
  • Projects and Assignments:

  • Performs a variety of other projects and
    assignments as required.
  • Education

  • Grade 12 Diploma or recognized
    equivalent is required.
  • Inventory
    or Supply Chain Management (an asset)
  •  Experience

  •  Experience
    or training in healthcare, long-term care food services
  •  Commercial
    kitchen experience
  •  Strong
    organizational and time-management skills
  •  Ability
    to maintain accurate records and attention to detail
  •  Effective
    communication and teamwork skills
  •  Proficient
    in computer systems and software applications
  •  Ability
    to lift and move food and supply items as required

  •  Working Conditions:

    ability to move freely about, lift, or push up to 50 lbs., and frequent
    stooping, kneeling, reaching, bending, and standing.
