Job Summary
Job Summary: Job incumbent is responsible for kitchen operations inducing menu planning, inventory management and purchasing, and enforcing safe food handling requirements and sanitation guidelines. Job incumbent prepares and cooks meals according to proper preparation methods and documents temperature requirements utilizing control forms. Job incumbent ensures that a quality, nutritious, cost effective meal program is available to youth and young adults. Incumbent maintains client information in relations to allergies or food sensitivities and plans alternate meals when necessary to meet individual requirements.
Adhere to the TCC Ch’eghwtsen’ model of service and guiding principle which requires providing timely and effective service along with the ability to interact with others in a way that inspires trust and demonstrates respect, compassion and empathy.
Essential Functions

Representative Duties: Under the supervision of the Program Manager, the job incumbent will:
1. Plan menus; prepare, cook, and serve meals and snacks that meet USDA/CACFP standards.
2. Maintain kitchen inventory and order supplies within budget guidelines. Provides accountability and receipts for food purchases.
3. Determine time and sequence of cooking operations to meet meal-serving hours.
4. Ensure kitchen facilities are in compliance with OSHA regulations. Maintain safety, cleanliness, and sanitation in the kitchen.
5. Maintains food stock and label food items appropriately.
6. Researches and prepares culturally appropriate foods.
7. May be asked to assist patients with nutritional information or food projects to improve daily living skills.
8. Completes and faxes the weekly breakfast, snack, and/or lunch menu, shopping list for meals, meal counts, and weekly grocery receipts. Posts weekly menu at site, noting any food changes due to available inventory.
9. May be required to shop for groceries as necessary.
10. Manages food service delivery. Maintains records required to meet licensing/certification standard.
11. Completes documentation in accordance with established standards and completes periodic reports as needed to maintain facilities and meet regulation standard.
12. Complete the daily Meal Counts and ensures accurate records for Project Director to report to CACFP.
13. Obtains and maintain Certified Food Worker Card and Certified Food Protection. Within 90 days of hire will obtain Manager Certification per CACFP regulations.
Other Responsibilities:
1. This position may perform Residential Aid duties as needed.
2. Performs other job-related duties as assigned.
Minimum Qualifications
Minimum Qualifications:
1. Must be at least twenty-one (21) years of age.
2. High school diploma or GED equivalent.
3. Must obtain a food workers card prior to first day of work and Certified Food Protection Manager certification within 90 days of hire.
4. Complete the CACFP training/orientation to include Civil Rights Training within the first two weeks of beginning work.
5. One year experience in institutional style cooking preferred. Technical or vocational training preferred.
6. Must pass background check pursuant to the State of Alaska background and federal Indian Child Protection and Family Violence Prevention Act requirements.
Knowledge, Skills and Abilities:
1. Strong understanding and sensitivity to diverse cultures and lifestyles, with demonstrated experience working effectively with Alaska Native populations.
2. Ability to interact with youth in a positive manner.
3. Ability to complete basic math calculations.
4. Ability to understand and implement state and federal regulations as they relate to food service and preparation.
5. Ability to accurately read and interpret food recipes and make appropriate substitutions as needed.
Supervision: This position has no supervisory responsibilities.
Supervision
Physical demands: Job incumbent must be able to lift and carry up to 50 pounds in support of equipment and supplies. Position requires recurring bending, stooping, kneeling, reading, handling, speaking, hearing, and seeing. Position may require extended periods of standing.
