The Sanitation Crew – Main Kitchen is responsible for performing deep cleaning and sanitation of all kitchen areas, equipment, and back-of-house spaces. This position plays a critical role in maintaining the cleanliness, safety, and functionality of the main kitchen, ensuring compliance with health and sanitation standards. The role requires working with commercial-grade cleaning equipment and chemicals in a fast-paced environment.
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Performs deep cleaning of grills, vents, stoves, fryers, ovens, and other kitchen equipment.
- Dusts, sweeps, and mops kitchen floors and storage areas regularly.
- Cleans kitchen walls, mats, workstations, prep surfaces, and back-of-house hallways.
- Washes and sanitizes trash cans and disposes of trash according to sanitation protocols.
- Uses approved cleaning agents, degreasers, and sanitation products safely and correctly.
- Operates pressure washers and other cleaning machinery in a safe and effective manner.
- Maintains cleanliness of the back loading dock and cardboard recycling area.
- Keeps all kitchen and stewarding areas clean, organized, and compliant with safety regulations.
- Communicates any maintenance needs or safety hazards to management promptly.
- Performs other job-related duties as assigned.
SUPERVISORY RESPONSIBILITIES:
This position does not have direct supervisory responsibilities but may provide guidance or support to other team members.
QUALIFICATIONS:
- Ability to stand and walk for the entirety of an 8-hour shift.
- Ability to lift, carry, and maneuver heavy cleaning equipment and materials.
- Familiarity with basic sanitation practices and the use of industrial cleaning tools.
- Ability to understand and follow safety protocols, cleaning instructions, and task assignments.
- High level of responsibility, attention to detail, and initiative in maintaining cleanliness.
- Ability to work effectively in a physically demanding, fast-paced environment.
EDUCATION and/or EXPERIENCE:
- High school diploma or equivalent preferred.
- Additional training in sanitation, safety, or hospitality operations is a plus.
- Food Handler Certification required or must be obtained upon hire.
- Minimum of 6 months to 1 year of experience in sanitation, janitorial, or stewarding roles, preferably in a commercial kitchen or food service environment.
- Familiarity with proper use of cleaning chemicals, equipment, and safety procedures.
- Ability to follow cleaning schedules, safety protocols, and health department standards.
- Experience cleaning kitchen equipment, floors, walls, and maintaining overall cleanliness in back-of-house areas.
- Strong attention to detail and ability to work independently and efficiently.
- Prior experience in a casino, resort, or high-volume food and beverage operation is preferred.
LICENSES, CERTIFICATES, REGISTRATIONS:
Must have successfully completed a background check and obtained a gaming license issued by the Morongo Gaming Agency, as required.
LANGUAGE SKILLS:
Must be able to read and interpret documents in English, such as instructions, guidelines, policies, and procedures. Must also be able to communicate clearly and effectively with team members, management, and guests.

- Communication Skills: Must be able to communicate clearly and respectfully with fellow sanitation crew members, kitchen staff, and supervisors; responsible for receiving cleaning assignments, reporting equipment or safety issues, and ensuring compliance with cleanliness standards.
- Lifting and Carrying: Frequently lifts and carries cleaning supplies, waste bins, floor mats, and kitchen equipment parts weighing up to 50 pounds; may involve overhead lifting and moving heavy or bulky items.
- Manual Dexterity: Regularly uses hands and fingers to operate cleaning tools, handle chemicals, scrub surfaces, and complete detailed cleaning tasks in hard-to-reach or sensitive areas.
- Mobility: Continuously moves throughout kitchens, dish areas, prep zones, walk-ins, and storage rooms; requires standing, walking, bending, stooping, kneeling, reaching, and lifting for extended periods.
- Stationary Work: Rarely remains seated; duties are performed while actively moving and cleaning in high-use and back-of-house kitchen environments.
- Tool Operation: Frequent use of mops, buckets, floor scrubbers, sprayers, squeegees, chemical dispensers, and hand tools; must follow proper sanitation and safety protocols during use and maintenance.
- Visual Acuity: Requires near and far vision to identify areas needing attention, ensure thorough cleaning, and verify cleanliness of surfaces, floors, and equipment.
- Working Conditions: Routinely works in wet, hot, and fast-paced kitchen and dish areas with exposure to cleaning chemicals, slippery floors, food debris, and equipment noise. Regular exposure to a smoking environment while transitioning through casino or public areas.
WORK ENVIRONMENT:
This is a dynamic, fast-paced environment that requires the ability to adapt and perform under pressure. The casino operates with moderate to loud noise levels and is a smoking environment, requiring team members to work comfortably in these conditions.
WORKING HOURS:
Morongo Casino Resort & Spa operates 24 hours a day, 365 days a year; therefore, flexibility in scheduling is essential. Team members must be available to work shifts that may include evenings, weekends, holidays, and special events. Schedules are subject to change based on business needs and may include overtime, as well as work on both weekdays and weekends.
