Overview
We are looking for a talented and passionate sushi chef to join our dynamic culinary team. Our establishment features two dining rooms with seating for up to 18 guests total, offering a calm, focused setting where precision, hospitality, and technique are paramount. The preferred candidate for this role will have experience with Japanese fish and cuisine, and can demonstrate proper and effective fish preparation. This role requires exceptional attention to cleanliness, organization, and detail, along with a refined and professional presence when working in front of guests.
This position offers a great opportunity to further develop traditional Edomae sushi techniques. Prior experience in an upscale sushi environment is preferred; however, we are open to training a highly motivated apprentice who demonstrates strong a strong foundation, discipline, and a genuine passion for the craft.
Duties
- Prepare and break down a variety of fish and other seafood with attention to detail and presentation
- Maintain the highest standards of food safety and hygiene during all stages of food handling and preparation
- Collaborate with kitchen staff to ensure timely service during prep/work hours while maintaining quality standards
- Ensure all food preparation adheres to health regulations and safety protocols
- Other duties as required
Skills
- Extensive culinary experience with a focus on Japanese cuisine or fine dining environments
- Proven expertise in food preparation, cooking techniques, and knife skills specific to sushi making
- Strong understanding of food safety standards, sanitation practices, and proper food handling procedures
- Excellent food service skills with the ability to work efficiently under pressure
- Familiarity with the food industry's best practices for quality control and customer satisfaction
