We are looking for a reliable and detail-oriented Overnight Baker to prepare focaccia bread and pizza dough for daily service. This role is hands-on and production-focused, involving mixing, shaping, fermenting, and baking dough to consistent standards.

Responsibilities

  • Mix focaccia and pizza dough according to established recipes
  • Shape, portion, and prepare dough for baking and next-day use
  • Bake focaccia bread to quality and consistency standards
  • Monitor fermentation times, temperatures, and dough quality
  • Operate mixers, ovens, and related bakery equipment
  • Maintain a clean, organized, and food-safe workspace
  • Label, store, and rotate products properly
  • Communicate any production or quality issues to management

Requirements

  • Experience with bread or pizza dough preferred (training available for the right candidate)
  • Comfortable working overnight shifts independently
  • Basic understanding of dough fermentation and baking processes
  • Ability to lift 50 lbs and stand for long periods
  • Strong attention to detail and consistency
  • Reliable, punctual, and organized

Preferred Qualifications

  • Experience with high-hydration doughs (focaccia)
  • Commercial bakery or pizza shop experience
  • Food handler certification
