Job Summary

Responsibilities

• Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry
• Maintain high standards of food safety, sanitation, and hygiene in all aspects of food handling and preparation
• Develop innovative menu items that align with customer preferences and current culinary trends
• Manage ingredient inventory, ensuring freshness and proper storage of seafood, rice, vegetables, and other supplies
• Collaborate with kitchen staff to ensure smooth workflow during busy service hours
• Uphold cleanliness standards in the sushi station, including knife skills and equipment maintenance
• Assist in catering events or special functions requiring sushi preparation and presentation

Experience

• Proven experience as a Sushi Chef or in a similar role within a fine dining or Japanese cuisine setting
• Strong knowledge of food preparation techniques specific to sushi, sashimi, and related dishes
• Demonstrated expertise in knife skills for precise slicing and cutting of seafood and vegetables
• Experience with menu planning to create balanced and appealing sushi offerings
• Background in food safety practices within the food industry or restaurant environment
• Familiarity with kitchen operations, food handling procedures, and maintaining high standards of cleanliness
• Prior dietary aide or dietary department experience is a plus for understanding special dietary needs
