Reports to: Tap Room Manager

Designation: Full-Time; Exempt
Salary Range: $45,000 - $55,000 plus tips

Westward Route

The Kitchen Manager is accountable for Tap Room back-of-house operations that make Hospitality on 66's food experience the preferred brand on the market.

Accountability
Radical Hospitality

  • Cultivates the food experience in the Tap Room
  • Sets the pace of service by managing Cooks
    • Runs the line
    • Assigns stations to Cooks
    • Rotates Cooks for breaks
    • Assigns side work and checks Cooks out at the end of shift
    • Determines shift length and "cuts" Cooks commensurate with sales volume
  • Identifies ways to improve the Mother Road guest dining experience
  • Develops and enforces SOEs, policies, and other verbal and written expectations
  • Verifies that the physical food trailer and storage space is kept clean and in good repair to meet Hospitality On 66's standards
  • Ensures work orders are submitted and completed in a timely manner
  • Listens to feedback from the crew and guests to improve food off erings
  • Collaborates with the Tap Room Manager to maintain a positive BOH and FOH relationship
  • Works with FOH crew to assist in timely food running
  • Administers the Cook schedule by working with the Director of Hospitality for accurate labor forecasting
  • Plans and executes specials
  • Manages all food vendors, and provides feedback on their work
  • Creates systems that adhere to CCHHS standards - sanitation, proper food handling and storage
  • Enforces food safety and HACCP programs

People & Culture

  • Coaches and mentors Cooks through Annual Check-ins, Road Map Programs, and one-on-ones throughout the year
  • Completes proper documentation of coaching and discipline, including verbal and written warnings
  • Ensures all Hospitality On 66 expectations, including the employee handbook, job descriptions, and other policies are adhered to
  • Leads daily stand ups and contributes to monthly meetings
  • Attends weekly manager meetings

Enterprise

  • Manages Food P&L line items
  • Creates, modifi es, and ensures inventory pars are executed.
  • Ensures invoices and receipts are coded and submitted
  • Completes EOM Food Inventories
  • Verifies Cook time cards
  • All other duties as assigned by the Director of Hospitality or Tap Room Manager

Responsibilities

  • Behaves as a cultural role model; exemplifi es Mother Road's purpose and values
  • Partners with other departments to execute cross-departmental projects
  • Performs daily kitchen and food storage walk-throughs
  • Maintains positive relationship with CCHHS
  • Qualifi cations & Certifi cations
  • 5+ years of kitchen experience, 3+ years of leadership experience
  • Coconino County Food Manager's Card
  • Flexibility to work weekends and holidays

Required Abilities?

  • Able to lift up to 35lbs independently from fl oor, at waist level, and above head
  • Able to stand for 10+ hours per day
  • Able to twist, crouch, bend, and stoop multiple times per day
  • Able to understand and interpret Safety Data Sheets (SDS) and handle chemicals in a safe manner
