The Head Utility Steward creates exceptional dining experiences for all patrons through integral contributions to the culinary and stewarding operations. The Head Utility Steward supports the Executive Chef with instructing and directing personnel of the Stewarding department.

The role of Head Utility Steward can provide you with:

A typical shift for Head Utility Steward may include the following responsibilities:

  • Alongside Utility Stewards, maintain the general cleanliness of the kitchen through performance of both general and specialized cleaning tasks.
  • Tasks include but are not limited to: dishwashing utilizing a commercial dishwasher; washing pots and pans by hand; sweeping and mopping floors; deep cleaning floors with commercial cleaners; cleaning working surfaces and kitchen equipment; and transporting and restocking cooking ware for cooks to support food service.
  • Provide instruction and training to Utility Stewards to ensure proper cleaning techniques and compliance to sanitation guidelines set forth by the company and Department of Sanitation.
  • Delegate tasks and provide directions to Utility Stewards to ensure productivity and timely completion of tasks. Supervise and monitor progress and offer support where needed.
  • Perform other tasks as assigned to support food service operations, including buffet running and assistant cook functions.

The ideal candidate has previous supervisory experience and strong working knowledge of commercial cleaning equipment and materials through a stewarding position, preferably in a hotel kitchen.

The ideal candidate will also possess the following knowledge, skills and abilities:

  • The ability to speak, read and write proficiently in the English language.
  • The ability to work a variety of shifts including days, evenings, weekends and holidays.
  • The ability to engage in considerable physical activity on a continuous basis including traversing and transporting items weighing up to 100 pounds.
  • The ability to work in varied environments including heat and cold.
  • The ability to effectively multi-task and maintain a productive pace, to support a high volume of food and beverage operations.
  • Working knowledge of cleaning chemicals and safe handling procedures.
  • As a condition of employment, candidate must be able to satisfy all pre-employment screenings; such as criminal background check, drug screening and personal and professional references.
