Job Summary:
We are looking for a talented and experienced Baker with expertise in preparing authentic Hispanic pastries from scratch. The ideal candidate will have a deep knowledge of traditional recipes and techniques for items like conchas, empanadas dulces, churros, orejas (palmiers), cuernos, and other pan dulce varieties. You will play a key role in producing high-quality, fresh baked goods daily while maintaining consistency, flavor authenticity, and visual appeal.
Key Responsibilities:
Prepare doughs, fillings, and toppings from scratch using traditional Hispanic recipes.
Bake a variety of pan dulce and pastries, including but not limited to: conchas, churros, empanadas (sweet fillings like pineapple, pumpkin, or cajeta), orejas, polvorones, marranitos, and elotes.
Mix, proof, shape, fill, fry (for churros/buñuelos), and decorate baked goods to meet daily production needs.
Ensure all products are made fresh daily with high standards of quality, taste, and presentation.
Monitor ingredient quality, inventory, and rotate stock to minimize waste.
Maintain a clean and organized workstation, adhering to food safety and sanitation guidelines (including HACCP standards).
Assist in developing seasonal or new variations of traditional recipes while staying true to authentic flavors.
Collaborate with the team on production schedules, especially for high-volume periods.
Qualifications and Requirements:
Proven experience (2+ years) as a baker, specifically with Hispanic, Mexican, or Latin American pastries (pan dulce experience highly preferred).
Strong knowledge of from-scratch baking techniques for traditional items like conchas (shell topping), churros, and fruit-filled empanadas.
Ability to work early mornings, weekends, and holidays as needed (baking shifts often start very early).
Physical stamina: Able to stand for long periods, lift 50 lbs (bags of flour/ingredients), and perform repetitive tasks.
Attention to detail, creativity, and passion for authentic cultural baking.
Food Handler's certification (or ability to obtain one).
Bilingual (English/Spanish) a plus, but not required.
Preferred Skills:
Experience in a panadería or high-volume bakery setting.
Familiarity with fillings like cajeta, pineapple, pumpkin, or cream cheese.
Ability to scale recipes for large batches while maintaining quality.
