Union House Kitchen + Bar is launching as the newest destination for "Elevated Comfort" dining in the heart of Old Town Scottsdale. This is not a standard managerial role; this is a foundational position offering foundational contributions to finance and culture. We are building a high-volume, high-performance concept ($3M+ annual revenue target) designed for maximum profitability and guest satisfaction.
We are seeking a rare breed of General Manager. An operations specialist who is also a masterful financial controller. Your success will be measured by your ability to drive aggressive financial margins (20% EBITDA) while maintaining a culture of elite hospitality (4.7+ star rating). This role is uniquely structured with a high base salary and an equally high performance bonus, guaranteeing a six-figure income to a proven winner.

What You Will Own: The Pillars of Profitability
Your primary mandate is the P&L statement. You will be held accountable for five critical metrics that define our success:
Financial Mastery (20% EBITDA Target): You will manage all revenue streams, cost centers, and expenditures to ensure Union House operates in the top tier of industry profitability. Your bonus is most heavily weighted here.
COGS Control (28% or Lower): Lead rigorous inventory management, negotiate high-volume contracts (e.g., our proprietary $40 cheesecake pricing), and enforce strict portion control systems to minimize waste.
Labor Efficiency (24% or Lower): Build and manage a high-velocity scheduling model, ensuring we staff for the rush and cut aggressively post-peak. You will lead the talent strategy to minimize turnover and maximize productivity.
Volume & Velocity: Implement operational strategies that maximize daily cover count (targeting 350+ covers/day) and optimize table turns during our busiest hours.
Culture and Service: Mentor and lead a team of 40+ FOH/BOH staff, instilling a culture of precision and genuine hospitality that earns top-tier online reviews.
Requirements: Top Performers Only
- Minimum 5 years of General Manager experience in a full-service, high-volume ($3M+ revenue) dining environment.
- Documented, verifiable track record of achieving Food COGS below 30% and Total Labor below 26%. We will verify these results.
- Highly proficient with modern inventory and POS systems (e.g., Toast, Restaurant365) and advanced P&L analysis.
- Must be a hands-on leader who thrives in the rush, setting the tone for efficiency and excellence.
Compensation and Application
Base Salary: $70,000 (Paid bi-weekly)
Performance Bonus (Quarterly): Up to $50,000 (Tied directly to EBITDA, COGS, and Labor targets)
TOTAL TARGET COMPENSATION: UP TO $120,000 (Highly achievable for a top performer)
