Assistant Meat Manager

The Assistant Meat Manager supports the Meat Manager by leading and executing the production operations of the meat department. This role focuses on cutting, processing, grinding, and other value-added production as well as food safety compliance, and production staff coordination.

The Assistant Meat Manager plays a hands-on leadership role in ensuring product quality, consistency, and efficiency while leaving inventory control, ordering, clerking, and administrative responsibilities primarily to the Meat Manager.

Key Responsibilities

ProductionProcessing

  • Lead daily meat production activities including cutting, trimming, grinding, sausage, patties, and value-added items.
  • Ensure all products meet Stoltzfus Meats' quality, yield, and presentation standards.
  • Follow production schedules and adjust workflow to meet volume and demand needs.
  • Monitor production efficiency and assist with continuous improvement efforts.
  • Reduce waste through proper cutting techniques and product utilization.

Food SafetyCompliance

  • Maintain strict compliance with food safety, sanitation, and HACCP standards.
  • Ensure proper handling, storage, labeling, and rotation of all meat products.
  • Conduct and document daily sanitation and temperature checks as required.
  • Model and enforce safe work practices and PPE usage.

Team LeadershipTraining

  • Provide day-to-day directions and support to production team members.
  • Train new and existing employees on production techniques, equipment use, and safety procedures.
  • Assist the Meat Manager with coaching, accountability, and skill development.
  • Serve as a working lead, setting the pace and standard for production work.

EquipmentFacility Care

  • Ensure proper use, cleaning, and basic maintenance of saws, grinders, slicers, and other production equipment.
  • Identify equipment issues and report maintenance needs promptly.
  • Maintain a clean, organized, and efficient production area.

CollaborationSupport

  • Communicate production needs, challenges, and opportunities to the Meat Manager.
  • Step in to support overall department operations as needed.
  • Assist with coverage and supervision in the Meat Manager's absence, as directed.

Responsibilities Not Typically Included

  • Inventory ordering and vendor communication
  • Pricing and margin management
  • Scheduling and payroll administration (These responsibilities remain primarily with the Meat Manager.)

Qualifications

  • 2+ years of meat cutting or meat production experience required.
  • Previous lead, trainer, or supervisory experience preferred.
  • Strong knowledge of meat cuts, production processes, and food safety standards.
  • Ability to work efficiently in a fast-paced, production-driven environment.
  • Strong attention to detail and quality.
  • Ability to lift up to 50 lbs and stand for extended periods.
  • Availability to work flexible schedules, including early mornings and weekends as needed.
