Executive Sous Chef

Pelican Yacht Club is seeking an experienced Executive Sous Chef to join our culinary leadership team. We're looking for a passionate, hands-on chef who thrives in a fast-paced, high-standard environment and takes pride in teamwork, consistency, and excellence.

The Executive Sous Chef will work directly alongside the Executive Chef in all areas of kitchen operations, leading by example, teaching, motivating, and inspiring the team each day. This position requires you to delegate and manage daily tasks and follow through on every detail to ensure quality and organization across all stations. Must be willing to support the team by working the line, prepping or whatever needs to be done.

Responsibilities

Support the Executive Chef in daily operations, menu development, and event execution

Lead, train, and inspire the culinary team with a positive, hands-on approach

Maintain high standards of quality, consistency, and presentation

Ensure proper prep, organization, and communication throughout service

Monitor and manage food cost, inventory, and waste control

Enforce safety and sanitation procedures and uphold club standards

Set the tone for professionalism, teamwork, and accountability

Qualifications

Minimum 3–5 years of leadership experience in a high-volume or upscale dining environment

Strong culinary fundamentals and a passion for teaching and mentorship

Proven track record of maintaining food and labor cost targets

Excellent organizational, communication, and follow-through skills

Able to stay calm, focused, and hands-on during peak periods
