Duties

  • Lead food preparation and cooking processes for greenhouse-grown ingredients, ensuring dishes meet high standards of presentation and flavor.
  • Supervise kitchen staff, including training, scheduling, and performance management to foster a collaborative and efficient team environment.
  • Oversee inventory management, including ordering, stock control, and minimizing waste to maintain optimal freshness of ingredients.
  • Plan menus that showcase seasonal produce while accommodating dietary restrictions and promoting healthy eating options.
  • Maintain strict food safety protocols in compliance with health regulations, ensuring proper handling and storage of all ingredients.
  • Coordinate with the dietary department to develop specialized menus for various dietary needs and preferences.
  • Manage kitchen operations during shifts, including overseeing food service from preparation to plating and ensuring timely delivery of dishes.
  • Collaborate with catering teams for special events, providing innovative plant-based or greenhouse-inspired culinary options.
  • Monitor quality control throughout food production processes to uphold the restaurant's reputation for excellence in fine dining experiences.

Requirements

  • Proven experience in banquet cooking, fine dining establishments, or restaurant management with a focus on fresh or greenhouse ingredients.
  • Supervising experience in a fast-paced culinary environment with team management responsibilities.
  • Strong background in food production, kitchen management, and food service operations within the food industry.
  • Knowledge of inventory control, food safety standards, and proper food handling techniques.
  • Excellent skills in menu planning, food preparation, cooking techniques, and catering coordination.
  • Experience in hospitality settings with an emphasis on restaurant experience and shift management.
  • Familiarity with dietary department requirements and catering services is highly desirable.
