Responsibilities
- Prepare and assemble a variety of sushi dishes with precision and artistry, adhering to established recipes and presentation standards
- Maintain the highest levels of food safety and sanitation in all aspects of food handling and preparation
- Ensure all ingredients are fresh, properly stored, and rotated according to safety protocols
- Collaborate with kitchen staff to plan menus that highlight seasonal ingredients and innovative sushi options
- Manage ingredient inventory, monitor stock levels, and communicate supply needs proactively
- Assist in training junior kitchen staff on sushi techniques, knife skills, and proper food handling procedures
- Uphold cleanliness standards in the sushi station and kitchen area at all times
Experience
- Previous experience working in a fine dining or high-end restaurant environment as a Sushi Chef or similar culinary role
- Strong knowledge of Japanese cuisine, sushi preparation techniques, and traditional plating methods
- Proven expertise in food preparation, cooking, and food handling within the food industry
- Demonstrated proficiency with knife skills essential for precise fish slicing and ingredient preparation
- Experience in menu planning, catering, and serving in a fast-paced setting is highly desirable
- Familiarity with food safety regulations and best practices for maintaining a clean, safe kitchen environment
- Background in dietary department or dietary aide roles is a plus but not required
