Job Overview
We are seeking a skilled and passionate Sushi Chef to join our culinary team. The ideal candidate will bring extensive experience in Japanese cuisine, particularly sushi preparation, and possess a strong commitment to food safety and presentation. This role offers an exciting opportunity to craft authentic sushi dishes in a fine dining environment, ensuring exceptional dining experiences for our guests. The Sushi Chef will be responsible for menu planning, food preparation, and maintaining high standards of cleanliness and safety in the kitchen.

Duties

  • Prepare a variety of sushi and Japanese dishes with precision and artistry, adhering to traditional techniques and presentation standards
  • Develop and refine sushi menus, incorporating seasonal ingredients and customer preferences
  • Ensure all food handling and preparation comply with food safety regulations and sanitation standards
  • Maintain cleanliness and organization of the sushi station, including knife skills and equipment sanitation
  • Collaborate with kitchen staff to coordinate meal preparation during service hours
  • Assist in training junior kitchen staff on sushi techniques, food safety, and proper handling procedures
  • Monitor inventory levels of ingredients specific to sushi preparation, placing orders as needed
  • Uphold the restaurant's reputation for high-quality cuisine through consistent execution of dishes

Qualifications

  • Proven experience in culinary arts with a focus on Japanese cuisine or sushi preparation; fine dining experience is preferred
  • Strong knowledge of food safety practices, food handling, and sanitation standards
  • Excellent knife skills and proficiency in various cooking techniques relevant to sushi making
  • Experience in menu planning, meal preparation, and food service operations within a restaurant or catering environment
  • Background in dietary department or dietary aide experience is a plus but not required
  • Ability to work efficiently under pressure while maintaining attention to detail
  • Excellent communication skills and ability to work collaboratively within a team
  • Culinary certifications or relevant training in food industry standards are advantageous
