Position Overview
The Lead Cook at The Virginian Golf Club is a step above the Cook role, responsible for executing high-quality dishes with consistency while demonstrating an advanced working knowledge of the menu. This position takes initiative in creating dishes, maintaining standards, and supporting team members during service. The Lead Cook works closely with the Sous Chef and Jr Sous Chef to ensure smooth kitchen operations and consistent dining experiences.
Key Responsibilities
• Prepare and cook menu items with precision, focusing on consistency, flavor, and presentation quality.
• Assist in menu execution, offering input on preparation methods, plating, and ingredient usage.
• Set up, organize, and maintain stations efficiently for smooth service and quick turnaround.
• Mentor and guide cooks and other kitchen staff on station operations, cooking techniques, and presentation.
• Support prep work and ingredient organization to ensure readiness for service periods.
• Maintain strict adherence to food safety, sanitation, and hygiene protocols.
• Monitor quality of ingredients, cooking processes, and finished dishes to uphold club standards.
• Assist in inventory tracking, restocking, and reporting supply needs to management.
• Collaborate with Sous Chef and Chef de Cuisine on menu innovation, seasonal updates, and special event preparations.
• Address operational or service issues on the line promptly, ensuring minimal disruption during service.
• Stay current on culinary trends, techniques, and best practices to enhance execution and menu offerings.
Qualifications
Required:
• Education: High school diploma or equivalent. Culinary certification or degree preferred.
• Experience: Minimum of 3 years in a professional kitchen, with supervisory or lead experience preferred.
• Skills: Proficiency in cooking techniques, knife handling, food safety, and kitchen operations.
Preferred:
• Experience in a fine dining or country club environment.
• Familiarity with inventory management and cost control systems.
Knowledge, Skills, and Abilities (KSAs)
• Strong culinary and leadership skills with a focus on quality and consistency.
• Ability to train, coach, and motivate team members.
• Excellent communication and interpersonal abilities.
• Strong organizational and multitasking capabilities in a fast-paced setting.
• Commitment to safety, sanitation, and continuous improvement.
Work Environment / Physical Requirements
• Commercial kitchen environment with exposure to heat, cold, and sharp objects.
• Requires standing, bending, and lifting for extended periods.
• Must be able to lift up to 50 lbs (supplies, equipment, ingredients).
• Requires flexible scheduling, including nights, weekends, and holidays.
