We are seeking an experienced Chef Manager to lead kitchen operations at a government dining facility and ensure excellence in food quality, safety, presentation, and team performance.

Position Overview

The Chef Manager is responsible for day-to-day kitchen operations, food production, menu execution, HACCP compliance, staff training, and maintaining the highest standards of cleanliness and customer satisfaction. This position works closely with the Dining Facility Manager to support all contract requirements.

Key Responsibilities

  • Lead all back-of-house operations, including meal preparation, batch cooking, short-order items, and serving line coordination.
  • Ensure all meals meet contract specifications, portion sizes, and quality expectations.
  • Train and supervise cooks, prep staff, and dishwashers.
  • Execute progressive cooking methods to support meal flow and freshness.
  • Maintain strict adherence to HACCP procedures and food safety regulations.
  • Oversee inventory, rotation, temperature logs, and waste reduction.
  • Coordinate premium and specialty meal events.
  • Ensure the kitchen, equipment, and storage areas meet all sanitation standards.
  • Collaborate with management on menu planning and operational improvements.

Qualifications

  • 3–5 years of culinary leadership experience (DFAC, institutional, hotel, or high-volume restaurant preferred).
  • Strong knowledge of HACCP and food safety requirements.
  • Ability to lead and motivate kitchen staff in a fast-paced environment.
  • Experience with menu execution, recipe adherence, and portion control.
  • Ability to lift up to 50 lbs and stand for extended periods.
  • ServSafe Manager or Food Protection Manager certification (or ability to obtain within 30 days).
  • Ability to pass a background check for base access.

Job Type: Full-time

Pay: $47, $53,000.00 per year
