About Pies'n'Thighs

We're a good-time bakery & fried chicken restaurant known for flaky pies, crispy thighs, and big-hearted hospitality. We cook from scratch, keep things simple, and treat people right—our team, our guests, and our neighborhood.

The Role

The Kitchen Manager owns day-to-day BOH operations and leads a team that cooks with care and consistency. You'll hire and train great people, set the pace on the line, uphold safety and sanitation, manage ordering/inventory, and partner with the GM on labor, food cost, quality, and the overall guest experience.

How Our Core Values Show Up In This Role

· Respect for Each Other, Our Guests & Our Jobs — Build a fair, inclusive kitchen; give clear feedback; leave every station better than you found it.

· Open & Honest Communication — Run pre-shifts, share what's working/what's not, and keep tight notes on recipes, prep, and repairs so the whole team stays aligned.

· Exceeding Expectations — Hold the line on specs and presentation; jump in on the pass to make good plates great; fix issues fast.

· Friendly & Knowledgeable Service — Partner with FOH during the rush, quote accurate times, and make guest recovery thoughtful and quick.

· Work Hard — Lead from the front, keep your cool when it's busy, and set the standard for hustle and follow-through.

What You'll Do

  1. Operational Excellence

· Lead opening, mid, and closing shifts; run effective pre-shift huddles.

· Keep equipment humming—coordinate maintenance and repairs; maintain a spotless, inspection-ready kitchen.

· Own ordering, receiving, counts, and pars to hit freshness and COGS targets.

· Maintain station guides, prep lists, line checks, and daily communication boards.

· Plan weekly schedules with the GM; balance coverage, fairness, and labor goals, for the Line cooks, Prep cooks and Porters.

  1. Food Quality & Safety

· Protect recipes and specs—taste, temp, and texture checks on every shift.

· Enforce DOH/HACCP and company sanitation standards; train, verify, document.

· Run regular tastings and refreshers; update batch sheets and build guides as menus evolve.

  1. People & Training

· Recruit, hire, and onboard BOH team members; foster a respectful, growth-minded culture.

· Coach in the moment; recognize wins; document feedback and development plans.

· Cross-train to build bench strength and create clear paths to lead and sous roles.

  1. Service & Guest Care

· Keep the pass smooth and calm; communicate ticket times and priorities with FOH.

· Handle guest feedback with grace; follow up with fixes and learning for the team.

  1. Business & Admin

· Track waste and yields; audit product quality and storage.

· Monitor labor and food cost; propose smart changes to prep, pars, or workflow.

· Maintain compliance with all health, safety, and employment practices.

What You'll Bring

· 2+ years BOH leadership in a high-volume scratch kitchen (or equivalent).

· Calm under pressure; organized with strong follow-through.

· Proven skills in scheduling, training, ordering, and inventory control.

· Food safety know-how (Food Protection certification or ability to obtain quickly).

· Clear, kind communicator who motivates a diverse team.

· Real love for hospitality—and serious respect for a perfect fried chicken and a perfect slice.
