Duties & Responsibilities:
- Prepare a variety of meats, poultry, vegetables, and other food items using broilers, ovens, grills, fryers, and other kitchen equipment.
- Take full responsibility for the quality of food served.
- Consistently follow standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
- Stock and maintain sufficient levels of food products at line stations to ensure smooth service.
- Portion food products before cooking according to standard portion sizes and recipe specifications.
- Maintain a clean and sanitary workstation, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection ovens, flat-top ranges, and refrigeration equipment.
- Prepare food items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating.
- Follow proper plate presentation and garnish setups for all dishes.
- Properly handle, store, and rotate all food products.
- Assist with food prep assignments during off-peak periods as needed.
- Close the kitchen properly and follow the closing checklist for all kitchen stations; assist other team members in closing procedures.
- Attend all scheduled employee meetings and contribute suggestions for improvement.
- Perform other duties as assigned by the Kitchen Manager or Manager on Duty.
Qualifications:
- Must be 18 or older
- At least 1 year of experience in kitchen preparation and cooking.
- At least 6 months of experience in a similar role.
- Ability to communicate clearly with managers, kitchen staff, and dining room personnel.
- Ability to reach, bend, stoop, and frequently lift up to 40 pounds.
- Ability to stand for long periods (up to 9 hours).
- Ability to follow printed recipes and plate specifications accurately.
- Must maintain personal hygiene in accordance with California health codes.
