At Fat Rosie's Taco & Tequila Bar, we bring bold flavors, unforgettable energy, and a whole lot of fun to every dining experience. We're looking for a dynamic Executive Chef to lead our back-of-house operations, elevate culinary excellence, and inspire a high-performing team that delivers consistency, quality, and excitement to every guest.
What You'll Do
As Executive Chef, you'll oversee all kitchen operations and be a critical partner to the General Manager and leadership team. You'll set the tone for food quality, culture, and operational performance by:
- Leading and mentoring the back-of-house team, fostering growth, accountability, and collaboration.
- Driving consistent food quality across purchasing, receiving, storage, prep, execution, and service.
- Designing and executing seasonal menus, specials, and new recipes that align with Fat Rosie's brand.
- Managing and controlling food and labor costs to meet or exceed company standards.
- Creating weekly labor forecasts, BOH schedules, and performance benchmarks.
- Overseeing vendor relationships, purchasing, inventory, and cost-control systems.
- Implementing and enforcing safety, sanitation, and food handling standards.
- Conducting and documenting line checks before each service to ensure readiness.
- Supporting, coaching, and developing Sous Chefs and BOH managers to grow future leaders.
- Partnering with FOH leadership to ensure seamless guest experiences.
- Driving accountability for financial performance, kitchen systems, and operational excellence.
What We're Looking For
- 5+ years of culinary leadership experience in a high-volume, fast-paced environment (Executive Chef or senior Sous Chef role).
- Proven ability to manage costs, drive profitability, and maintain brand standards.
- Strong leadership skills with a track record of training and developing teams.
- Exceptional organizational and multitasking abilities.
- A collaborative, positive, and guest-focused approach.
- Flexibility to work nights, weekends, and holidays.
- Ability to lift/move up to 50 lbs. and remain on feet for extended periods.
- Knowledge of food allergy protocols and proper food handling procedures.
Required Certifications
- Valid Manager State Food Service Sanitation Certificate
- Allergen Certification
- Authorized to work in the U.S
