Galley Beach is a high-volume, fine dining seasonal restaurant located on Nantucket Island. We focus on exceptional quality, sourcing ingredients as locally as possible, with most seafood and produce coming from on-island purveyors and farms. Our pastry and bread program reflects the same commitment to precision, seasonality, and execution.
We are seeking a Pastry/Bread Maker Assistant to support daily production and service in a fast-paced fine dining environment. This role requires strong technical skills, attention to detail, and pride in both flavor and plating.
Responsibilities:
  • Assist in daily production of breads, pastries, and desserts for service
  • Execute consistent, clean, and refined plating and presentation during service
  • Support seasonal pastry menus (Spring, Early Summer, Late Summer, Fall) and daily specials based on local ingredients
  • Maintain organization and accuracy during mise en place and service
  • Rotate responsibilities within the pastry department to cover days off
  • Assist with portion prep for other shifts when needed
  • Maintain strict cleanliness, sanitation, and food safety standards
  • Stock, rotate, and inventory ingredients to ensure quality and cost control
  • Follow established systems and procedures specific to Galley Beach
  • Report to and follow direction from the Executive Chef and Pastry Chef
Qualifications:
  • Minimum 2 years experience in pastry and/or bread production in a fine dining or high-volume restaurant
  • Strong understanding of baking fundamentals, doughs, and pastry techniques
  • Demonstrated attention to detail in finishing, plating, and visual presentation
  • Ability to work efficiently in a fast-paced, team-oriented kitchen
  • High level of professionalism and passion for the pastry craft
  • Excellent communication and organizational skills
Physical Requirements:
  • Ability to stand and work on your feet for 10+ hours per shift
  • Must be able to lift 40 lbs regularly
  • Kitchen spans two floors; frequent use of stairs throughout the shift
