Neighborhood Sushi provides guests an approachable sushi experience with influences of Texas flavors, Japanese design and Austin hospitality. Fresh & light soups, salads and small plates follow traditional sushi bar inspirations. Enjoy a selection of crispy seafood and local vegetable tempura.
Nigiri in classic cuts of Japanese Red Snapper, Sea Bream and Santa Barbara Uni are complemented by vegetarian preparations of Texas Sweet Corn topped with togarashi & serrano, and specialty bites like the Caviar Oyster with Japanese uni, salmon roe & sake ponzu. Rolls and hand rolls round out the menu with original arrangements of Fluke with tempura yam and almonds and Tempura Shrimp with Big Eye tuna and avocado.

Role Summary
The Lead Sushi Line Cook helps oversee sushi bar production and line execution, ensuring high-quality dishes, proper technique, and smooth service. This role supports training, station leadership, inventory, and quality control across maki, nigiri, and prep stations. You will lead by example, uphold standards, and contribute to a positive, team-forward culture.
What You Will Do
- Support the Sushi Chef and kitchen leadership in executing the restaurant's sushi program and overall culinary vision.
- Maintain a hands-on presence on the sushi line, ensuring consistency, quality, and accuracy during service.
- Prepare and execute nigiri, maki, sashimi, and specialty items while upholding standards for technique, presentation, and taste.
- Help train and mentor sushi cooks, fostering a positive, professional, and team-oriented work environment.
- Assist with daily prep, fish butchery, and ensuring stations are properly stocked and organized.
- Uphold all food safety, cleanliness, and sanitation guidelines, especially around raw fish handling.
- Support inventory management by monitoring product quality, reporting needs, and assisting with par maintenance.
- Coordinate with the front-of-house team to ensure smooth, timely service and consistent guest experience.
- Contribute to a culture of continuous learning, curiosity, and respect in the kitchen.
What You'll Bring
- Passion for Craft: A genuine interest in sushi, Japanese technique, and providing excellent guest experiences.
- Communication: Ability to communicate clearly, respectfully, and effectively with both BOH and FOH teams.
- Leadership: Experience guiding or training others on a station; able to lead by example with attitude and work ethic.
- Technical Skill: Strong knife skills and a working understanding of sushi preparation, cutting techniques, and proper handling
- Professionalism: Ability to work cleanly, stay organized, and maintain composure in a fast-paced environment.
- Experience: 1–2 years of sushi or Japanese cuisine experience preferred; 1 year of leadership or station-lead experience
- Language: English proficiency required; Spanish is a plus.
- Team Mindset: A collaborative, humble approach—someone who values "we" over "me."
