Chef de Cuisine

Essex Restaurant is a 150-seat restaurant and bar on the Lower East Side featuring contemporary steakhouse cuisine, Mediterranean inspired shares and an eclectic and vibrant brunch. 
The  will be responsible for overseeing all aspects of the kitchen, from menu development and execution to staff training, food quality, and consistency. The ideal candidate will bring creativity, leadership, and a proven track record in managing high-volume, high-quality kitchens, with particular strength in meat preparation and Mediterranean-inspired flavors. Experience managing a busy brunch service and Spanish language skills a plus.

Essential Functions

• Oversees the operations of the kitchen and back-of-house, ensuring that food is prepared safely, efficiently, and according to specifications or request. Ensure all menu items are prepared properly and timely for service daily.
• Hires, trains, develops and appraises staff effectively. Takes corrective action as necessary on a timely basis and in accordance with company policy. Consults with human resources as appropriate.
• Develop recipes and portion specifications in consultation with Corporate Chef
• Work with GM an Corporate Chef to ensure consistency of product, identifying potential issues and planning for upcoming events.
• Responsible for food costs and labor costs in assigned restaurant.
• Responsible for developing relationships with vendors, 
• Manage all levels/areas of the back of house and fill a role on the line or expo as needed.
• Initiate relevant maintenance requests for repairs needed in the kitchen.
• Responsible for maintaining sanitation and cleanliness standards
