Boka Restaurant Group, a James Beard Award-winning entity, is seeking a skilled Sushi Cook to join their team at Itoko, located in the Southport Corridor. This role involves cooking and preparing sushi items while adhering to strict safety and sanitation standards.
The ideal candidate will possess 1 year of prior experience in the same role and be able to work nights and weekends. A polished, professional demeanor is essential for providing great service and becoming a valuable member of the team.
Required Skills & Qualifications:
- Cook and prepare sushi items according to established standards
- Responsible for prepping for, stocking, and maintaining the sushi station
- Ensure quality and portion control of prepared fish
- Store, label, and date all fish products correctly
- Maintain consistency in fish portioning
- Display knife, fileting, cooking, and prepping skills
- Provide exceptional guest service and interaction at the sushi bar
- Operate and maintain kitchen equipment safely
- Communicate equipment needs/maintenance requests to management
- Assist in storing ingredients and deliveries according to sanitation guidelines

Physical Requirements:
- Lift and move up to 10 pounds; frequently lift and/or move up to 25 pounds; occasionally lift and/or move up to 50 pounds
- Use necessary tools, equipment, and cleaning chemicals safely
- Stand and walk for an entire shift, including moving through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces
- Work in hot and cold environments
