Pastry Chef Job Description

We are seeking a highly skilled Pastry Chef to produce high-quality desserts, pastries, and baked goods consistent with the restaurant's California-inspired cuisine.

About the Role:

  • Prepare a variety of pastry items: desserts, plated sweets, breads, viennoiserie, cookies, tarts, etc.
  • Follow recipes and plating specifications to maintain consistency and high quality.
  • Bake, chill, freeze, and finish pastry components with attention to texture and presentation.

Responsibilities:

  1. Pastry Preparation: Prepare a range of pastry items for service, ensuring they meet the highest standards of quality and presentation.
  2. Recipe Execution: Follow established recipes and plating guidelines to deliver consistent results.
  3. Presentation and Plating: Plate and finish desserts during service, maintaining high standards of presentation.

Creative Development:

  • Collaborate with the executive chef to develop new dessert concepts and menus.
  • Assist in menu changes, recipe testing, and seasonal dessert creation.

Station Management:

  • Maintain a well-organized mise-en-place and pastry station.
  • Ensure cleanliness and sanitation of your workspace, adhering to health and safety standards.

Quality Control:

  • Monitor product quality, portion size, consistency, and freshness.
  • Maintain proper food rotation (FIFO) and adhere to expiration/food safety protocols.
