Okay, but what does an Expo
actually
do? Act as the final checkpoint for every dish — checking accuracy, plating, and portion sizes before it reaches a guest Bridge the gap between the kitchen (BOH) and servers (FOH), keeping communication clear and service running on time Organize and prioritize incoming tickets to maintain kitchen pace and keep wait times short Keep the expo station clean, stocked, and ready to roll throughout service Assist with packaging takeout and delivery orders accurately and efficiently
