GOOD TIME CHARLEY’S CHEF/ KITCHEN MANAGER About Us Join the team managing one of Ann Arbor's most iconic and high-volume dining and nightlife establishments. Good Time Charley’s, a U-M hotspot for over 40 years, Cantina, and BTB Burrito (a campus staple for burritos and Mexican food) all operate out of the same kitchen at 1140 S University. We are a fast-paced, high-volume operation focused on hustle, teamwork, and customer service. Job Summary The GTC Chef/Kitchen Manager is responsible for ensuring the standards of quality and efficiency for the entire back-of-house (BOH) operation, overseeing all three concepts: Good Time Charley’s, Cantina, and BTB Burrito. This is a hands-on leadership role that requires proficiency in all BOH positions and a commitment to leading by example. Key Responsibilities Staff Management & Leadership: Hire, train, and manage all kitchen staff to ensure high standards from the back door to the expo line. Cultivate a positive and productive work environment by building trusting relationships and demonstrating a hands-on approach. Operational Excellence: Maintain efficiency, quality, and speed across all three concepts in a high-volume setting. Establish, communicate, and ensure consistent guidelines for food preparation, execution and presentation. Cost Control & Inventory: Systematically control food cost by placing food orders, counting and calculating inventory, reviewing invoices and pars, and working closely with vendors to hit financial goals. Scheduling & Labor: Use 7shifts to create staff schedules optimized for business levels, ensuring quality and speed while controlling labor costs. Communication: Maintain strong communication with the Back and Front of House teams during weekly meetings. Requirements & Qualifications Proven management experience in a high-volume restaurant environment. Must be proficient in, and willing to work in, all BOH operational roles Must be a strong leader and great communicator with a positive attitude. Ability to work 45-55 hours per week, including availability for nights and weekends, . Basic proficiency in Google Docs and Sheets is preferred.
