The Roasting Supervisor is responsible for leading the daily roasting operations at Fratello Coffee
Roasters, ensuring coffee is roasted consistently, accurately, and in accordance with established
quality, food safety, and production standards.
This role executes the roasting schedule as provided by the Product & Operations Manager and
may roast regularly as needed, while maintaining primary accountability for training, roast
consistency, quality assurance cupping, green coffee inventory support, green grading
support, and cross-department collaboration. The Roasting Supervisor plays a critical role in
protecting product quality, developing roasting talent, and ensuring operational continuity.
Areas of Responsibility:
1- Roasting Operations & Execution:
• Execute the daily roasting schedule as provided by the Product & Operations Manager
• Roast coffee as required to support production needs, coverage, or training
• Oversee all roasting activities including loading, weighing, filling, roasting, assembling, blending and grinding
• Adjust roasting priorities in real time to address quality concerns, equipment issues, or
operational constraints
• Ensure roasted coffee is produced according to approved roast profiles and specifications
• Monitor roast performance, batch accuracy, and throughput
• Ensure roasted coffee is handled, labeled, and transferred appropriately post-roast
2- Roast Consistency & Quality Control:
• Maintain roast consistency across all SKUs and production runs
• Monitor roast curves, development times, color, moisture, and other key quality indicators
• Identify roast deviations and implement corrective actions
• Maintain and update roast documentation as required
• Support continuous improvement of roast quality and repeatability
3- Systems Accountability:
• Review, approve, and complete all roasted bean build assemblies in Odoo
• Ensure all roasting logs and documentation are accurately recorded and completed in
Cropster
• Train Roasting Team Members on proper build assembly creation and completion
• Maintain accountability for build assembly accuracy, completeness, and timeliness
• Ensure all required production and roasting documentation is completed and retained
accurately
QA Cupping & Sensory Oversight:
• Lead and participate in regular quality assurance cupping sessions
• Evaluate roasted coffee for consistency, defects, and adherence to flavor expectations
• Document cupping results and communicate findings to Product & Operations Manager as
required
• Escalate quality concerns promptly and support root-cause analysis
• Assist with calibration and sensory alignment within the roasting team
Green Coffee Management Support:
• Monitor and maintain green coffee inventory accuracy
• Notify the Product & Operations Manager of low green coffee levels
• Assist with green coffee grading, inspection, and evaluation as required
• Support identification of green defects or quality risks prior to roasting
• Communicate green quality observations to the Product & Operations Manager
• Support green handling best practices to protect quality and traceability
People, Leadership, Training & Development:
• Supervise, train and coach the Production Roaster and Roasting Assistant on roasting
SOPs, profiles, equipment operation, and quality standards
• Ensure all roasting team members read, understand, and sign off on required training and
SOP documentation
• Enforce adherence to documented procedures and performance expectations
• Participate in hiring, onboarding, performance feedback, and discipline processes as
required
• Provide day-to-day guidance, feedback, and support to the roasting team
• Support skill development, cross-training, and succession planning within the roasting
department
• Foster a positive, accountable, and safety-focused team environment
Quality, Food Safety & CFIA Compliance:
• Ensure compliance with all food safety programs and preventive maintenance schedules
assigned to you by Product & Operations Manager.
• Ensure roasting operations comply with all food safety, sanitation, Fratello's Preventive (Control Plan (PCP), SOPs, and CFIA requirements)
• Monitor and ensure preventive maintenance tasks are completed as scheduled
• Identify equipment issues and escalate to Product & Operations or maintenance partners
as required
• Exercise authority to stop packaging lines, quarantine product, and escalate issues to (Operations or QA as required)
• Ensure proper cleaning, sanitation, and safety practices are followed in the roasting area
Professional Conduct & Cross-Department Collaboration:
• Act as a positive ambassador for the roasting team by fostering respectful and collaborative
relationships with all departments
• Communicate professionally, accurately, and constructively across the organization,
including regular coordination with the Product & Operations Manager, Packaging
Supervisor, and Warehouse Supervisor
• Build morale and support a positive workplace culture through teamwork and solution-
focused communication
• Maintain confidentiality and professionalism at all times; avoid gossip, speculation, or the
sharing of unverified information
• Escalate concerns, issues, or conflicts through appropriate leadership channels
• Demonstrate a high level of discretion and emotional intelligence due to frequent cross-
department interaction
• Support flexible use of labor, including sharing team members across departments when
required to meet operational demands
Monitoring, KPIs & Continuous Improvement:
• Monitor roasting KPIs including roaster performance, consistency, rework, downtime, and
yield
• Track and address trends affecting quality or throughput
• Identify opportunities to improve roast consistency, efficiency, and training effectiveness
• Support audit readiness and internal verification activities
Experience and Qualifications
You're a great fit if you have:
• 3+ years of experience in coffee roasting or production roasting environments
• Strong understanding of roast development, profiles, and quality control
• Experience training or mentoring other roasters
• Sensory evaluation and cupping experience
• Familiarity with green coffee grading and defect identification
• Strong understanding of food safety, GMPs, and regulated manufacturing environments
• Experience with build assemblies, inventory systems, and production documentation
• High attention to detail and commitment to quality and accuracy
• Strong communication, leadership, and organizational skills
• Ability to manage changing priorities in a fast-paced environment
• Proficiency with Microsoft Word, Excel, Outlook, and Odoo / QuickBooks or similar systems
• Minimum high school education
• Ability to perform physical tasks associated with roasting operation
