Position Summary:
Reporting to the GCT Director of Food & Beverage, the Food & Beverage Manager (Outlet) is responsible for the overall planning, execution, and performance of all banquet and catering operations at Great Canadian Casino Resort and Pickering Casino Resort. This role owns guest experience, service standards, operational execution, labor management, and financial results for meetings, conferences, VIP events, and special functions in a casino/hotel environment. The Food & Beverage Manager (Outlet) leads banquet leadership and frontline teams and ensures flawless execution, strong client satisfaction, and full regulatory and company compliance.
Key Accountabilities:
Operational Leadership
- Own all banquet and catering operations including set-up, service execution, and tear-down.
- Ensure consistent, high-quality guest experience for all events and functions.
- Lead daily and event-specific operational planning meetings.
- Ensure room sets, timelines, and service flows are executed to standard.
- Lead execution of VIP events, Player Development events, and special activations.
Service Standards & Compliance
- Ensure all service is delivered to brand standards and guest expectations.
- Ensure compliance with all health & safety, food safety, and responsible alcohol service requirements.
- Ensure all team members are properly trained and certified as required.
- Own incident response, documentation, and follow-up.
People Leadership
- Lead, develop, and performance-manage banquet supervisors and frontline teams.
- Build strong training plans and succession pipelines.
- Partner with HR and Labour Relations in a unionized environment.
- Build schedules and staffing plans aligned to event volumes and service standards.
- Drive a culture of professionalism, accountability, and guest-first service.
Financial & Business Management
- Own banquet labor productivity, controllable costs, and event profitability.
- Partner with Sales/Catering on pricing, menus, and service models.
- Ensure accurate forecasting, staffing plans, and post-event reviews.
- Identify opportunities to improve efficiency, service quality, and profitability.
Systems & Process
- Ensure strong execution of event management systems, POS, and internal planning tools.
- Build and enforce SOPs for banquet operations and service execution.
- Partner with Culinary, Sales, Finance, and Operations on continuous improvement.
Stakeholder Management
- Work closely with Culinary, Sales, Player Development, Hotel, and Operations.
- Act as the operational owner for client and internal stakeholder satisfaction.
- Represent Banquets in cross-functional planning meetings.
Education and Qualifications:
- Post Secondary hospitality or hotel education or suitable combination of education and experience Minimum 2 years F&B management experience
- Food Safety Certificate
- Ability to exceed internal and external customer expectations through timely, effective and service oriented communication
- Computer literacy in MS Office, POS experience
- Ability to successfully obtain a Gaming License
