We are seeking passionate and creative crew member to join Amici's culinary team Responsibilities to include:

1. Kitchen Operations, Systems & Training – Amici Focus
You are the on-the-ground leader for all day-to-day kitchen operations at Amici, ensuring service runs smoothly and consistently to brand standards, while supporting alignment with broader Field House systems.​

  • Build, document and maintain standard operating procedures for Amici (open/close, prep flow, service readiness, cleaning routines, station setup, handoffs between services, end-of-night checks).
  • Ensure systems are simple, teachable and consistently followed through daily line checks, station audits and pre/post-shift walkthroughs.​
  • Own role-specific kitchen training at Amici: onboarding checklists, station training plans, recipe and plating standards, and ongoing skills development for cooks and leads.​
  • Partner with the Culinary Director to adapt group systems for Amici's Italian menu and service style, identifying bottlenecks on the line and proactively improving workflows.​
  • Ensure clear shift leadership is in place (who is running the line, expo, prep) and that menu execution is consistent across all services.​

2. Culinary Execution & Menu Support
You champion Italian cookery, recipe execution, and guest experience at Amici, while supporting broader menu initiatives when needed.​

  • Maintain high standards of recipe execution, seasoning, plating and ticket times during all Amici services, with a strong presence on the line during peak periods.​
  • Support rollout of new menus and features at Amici: training staff, updating station guides, prep lists and service notes for smooth launches.​
  • Provide structured feedback to the Culinary Director on menu performance (complexity, prep load, guest response, execution challenges) and suggest improvements or refinements.​
  • Collaborate on seasonal planning by communicating sales trends, capacity constraints and opportunities specific to Amici.​

3. Kitchen Costs, Controls & Accountability
You support cost control systems at Amici, driving accuracy and discipline in inventory, ordering and usage, in partnership with the Director of Culinary.​

  • Execute and maintain inventory, ordering and waste tracking systems at Amici, ensuring counts are accurate and orders reflect par levels and sales trends.​
  • Ensure portion and usage controls are followed (scales, ladles, recipe cards, yield tracking), coaching cooks when variances appear.​
  • Support menu costing and ingredient sourcing by providing accurate usage data, yield notes and prep realities from Amici's kitchen.​
  • Work with the Culinary Director to forecast needs and adjust systems based on seasonality and sales volume at Amici.​
  • Contribute to KPI tracking (labour, COGS, waste) with clear follow-up on missed targets at Amici, including corrective action plans for prep, portioning and ordering.​

4. Team Leadership, Coaching & Culture
You are a visible, consistent leader for the Amici kitchen team, modelling Field House/GLB practices and building a strong, growth-focused culture.​

  • Spend the majority of your time on-site at Amici, working shoulder-to-shoulder with the team on the line, in prep and during service.​
  • Hold team members accountable to kitchen standards (cleanliness, organization, prep quality, ticket times, communication), following up consistently and constructively.​
  • Lead regular check-ins with team leads and crew members at Amici, offering feedback on performance while listening for pain points and improvement ideas.​
  • Identify training opportunities and create structured development paths for key roles (lead line, sous, prep leads), aligned with Field House's focus on personal and professional growth.​
  • Address performance issues promptly and respectfully, using established documentation and HR systems to record conversations and action plans.​

Amici (Italian for 'friends') Wine Bar is a new hospitality experience in Downtown Abby. Inspired by Italy's connection to local agriculture, this modern Italian concept will connect to our unique food in the Fraser Valley, paired with a curated selection of Italian and BC wines, quality cocktails and fine selection of BC craft beers.
