We are seeking a talented and passionate Assistant Kitchen Manager to join our busy breakfast restaurant, Moké's Kailua. The ideal candidate will have a strong background in casual dining and be skilled in food preparation, inventory management, and shift management. This position starts at 4am three days per week and 6am two days per week. You are able to finish in the early afternoon, an ideal schedule for spending evenings family or enjoying the beach. The Assistant Kitchen Manager will play a crucial role in maintaining the high standards of our kitchen while supervising staff and ensuring exceptional food service for our guests.
*Responsibilities*
* Assist the Head Chef in the overall management of kitchen operations, including menu planning and execution.
* Supervise kitchen staff, providing guidance and training to ensure adherence to recipes and presentation standards.
* Manage inventory levels, placing orders as necessary to maintain stock while minimizing waste.
* Oversee food preparation processes to ensure quality and consistency in every dish served.
* Collaborate with the culinary team to create innovative menu items that enhance the dining experience.
* Ensure compliance with health and safety regulations within the kitchen environment.
* Coordinate special events, ensuring timely delivery of food and service excellence.
* Maintain cleanliness and organization of the kitchen area, adhering to sanitation standards.
*Requirements*
* Proven experience as a Sous Chef or in a similar role within the food industry, preferably in fine dining establishments.
* Strong knowledge of kitchen operations, including inventory management and food preparation techniques.
* Excellent leadership skills with the ability to supervise and motivate kitchen staff effectively.
* Familiarity with banquet service operations is a plus.
* Ability to work efficiently under pressure in a fast-paced environment while maintaining attention to detail.
* Strong communication skills to facilitate collaboration within the culinary team.
* A passion for culinary arts and a commitment to delivering high-quality dishes.
