PurposeResponsible for assisting the Sous Chef in the planning and execution of daily bakery production for University Housing and Dining (UHD).
ResponsibilitiesAssist in the preparation of all types of baked goods utilizing commercial kitchen equipment, this may include mixing breads, pastries, cakes, as well as preparing and applying frosting, icing and glaze for baked goods. Read and comprehend recipes, including recipe conversions. Independently prepare recipes in a high-volume establishment. Execute recipes according to business needs, aiming to reduce waste and provide the freshest product possible. Report any recipe discrepancies to the Chef.
Assists with preparing product transfers and requisitions for bakery location and complete daily production records and waste sheets. Assists in cleaning all bakery areas and maintain all hot and cold storage areas in a safe and organized condition. Check computer printouts for menu amounts and recipes, review menu and purchase requirements.
Collaborate with kitchen staff to ensure timely and efficient food service. Maintain a clean and organized workspace for efficient food preparation and presentation. Make sure baked goods are visually appealing and presented in an attractive manner. Communicate professionally and effectively with staff, supervisory staff, and/or customers. Maintain current knowledge of all areas of responsibility.
Ensure timely delivery of quality products. Ensure compliance with food safety and sanitation guidelines. Ensure proper labeling and storage of products. Maintain temperature logs throughout shift and ensure food is baked and maintains appropriate temperature throughout service. Avoid cross contamination and actively monitor food quality.
Adhere to written and oral University and UHD policies such as time and attendance and UHD / UT trainings and compliance. Complete and maintain required food safety training, including Texas Food Handler Safety. Follow work safety guidelines and utilize proper PPE as needed. Other duties as assigned.
One year of experience as a baker in a restaurant, commercial, or institutional facility.
Experience operating baking equipment.
Experience following recipes.
Ability to complete and maintain Food Safety Training required by University Housing and Dining.
Relevant education and experience may be substituted as appropriate.
Preferred QualificationsCulinary Degree.
Two years of experience as a baker in a restaurant, commercial, or institutional facility.
Experience preparing and baking from scratch.
High volume baking experience.
Ability to multitask and work with little supervision.
$41,600 + depending on qualifications
