Job Title: Head Chef

Location: Chubby Tan
Reports To: General Manager / Ownership

Position Summary

The Head Chef at Chubby Tan is responsible for leading all kitchen operations, ensuring food quality, consistency, cost control, and team development. This role is hands-on, leadership-driven, and execution-focused. You set the tone of the kitchen — discipline, speed, and standards — every single service.

Key ResponsibilitiesKitchen Operations

  • Oversee daily BOH operations including prep, service, and closing procedures
  • Ensure all dishes meet Chubby Tan's standards for taste, presentation, and consistency
  • Maintain smooth service flow during peak hours
  • Develop and update prep lists, pars, and station setups

Menu Execution & Development

  • Execute the existing menu with precision and consistency
  • Collaborate with management on menu updates, seasonal items, and specials
  • Standardize recipes, portion sizes, and plating guides
  • Ensure new menu items are costed, tested, and trainable

Team Leadership & Training

  • Lead, train, and mentor BOH staff (line cooks, prep cooks, dish team)
  • Enforce kitchen discipline, cleanliness, and professionalism
  • Conduct onboarding and ongoing skills training
  • Build a culture of accountability, teamwork, and pride in the craft

Inventory & Cost Control

  • Manage food inventory, ordering, receiving, and storage
  • Monitor food costs, waste, and spoilage
  • Work with management to meet food cost targets
  • Conduct regular inventory counts and audits

Food Safety & Compliance

  • Ensure full compliance with health department regulations
  • Maintain high standards of sanitation and food safety
  • Train staff on proper handling, storage, and cleaning procedures
  • Be inspection-ready at all times

Qualifications

  • Proven experience as a Head Chef or Sous Chef in Japanese Cuisine at least 3 years
  • Strong understanding of BOH operations and high-volume service
  • Leadership mindset with hands-on execution skills
  • Ability to train, motivate, and manage a diverse kitchen team
  • Knowledge of food costing, inventory systems, and prep planning
  • Ability to stay calm and decisive under pressure
