Burl Evanston is a new wood-fired restaurant opening in early 2026 in the Central Street Merchant District in Evanston, Illinois. The first restaurant from Chef Tom Carlin and partner Rachel Canfora-Carlin, known for their craftsmanship, warmth, and genuine hospitality, Burl will offer a refined yet approachable dining experience rooted in seasonality and community.
We are seeking an experienced a Full-Time Prep Cook that will be foundational to the success of both the line and the guest experience. By ensuring ingredients are perfectly prepared, organized, and ready, Burl Prep Cooks allow the rest of the culinary team to execute dishes flawlessly. The role combines attention to detail, efficiency, and a strong sense of teamwork. As part of the opening team, Burl Prep Cooks will help establish kitchen organization, mise en place standards, and workflows that set the tone for all future service.
Experience & Qualifications:
- Minimum of 3 years working in a fast paced, full service restaurant preferred
- Knowledge of kitchen equipment, cooking techniques, and basic food safety
- Ability to follow instructions and work efficiently in a fast-paced environment
- Must have open availability including evenings & weekends
- Strong interpersonal & communication skills
- Ability to multi-task and stay composed in a high-volume environment
- Arrive on time, prepared, and in proper uniform
- Must be able to frequently lift items weighing up to 50 pounds and have the ability to stand for extended periods.
- Must have completed and maintained certification in ServSafe Food Handler Certification, and ServSafe Allergen
Duties & Responsibilities:
- Participate fully in pre-opening training, mock services, and system testing
- Remain adaptable and solution-oriented during opening phases
- Prepare vegetables, proteins, sauces, and other ingredients according to recipes and portioning standards
- Wash, peel, chop, and portion ingredients consistently and accurately
- Maintain high standards for freshness, quality, and food safety
- Assist in basic cooking tasks as directed by the Sous Chef and Executive Chef
- Label and date all prepped items to ensure proper rotation
- Organize ingredients, containers, and storage for efficient line use
- Monitor ingredient levels and communicate needs to management
- Receive, organize, and put away weekly deliveries from vendors, ensuring proper storage, labeling and rotation
- Maintain cleanliness and orderliness throughout the prep area
- Follow all food safety, sanitation, and health department guidelines
- Maintain clean cutting boards, knives, containers, and work areas
- Participate in daily deep cleaning tasks, including storage areas and walk-in cooler
- Ensure compliance with kitchen organization standards at all times
- Communicate clearly about prep readiness and any issues
- Help make daily staff meal, ensuring options are healthy & diverse
- Arrive on time, prepared, and in proper uniform
