The Executive Pastry Chef oversees the daily preparation of high-end confectionery items, ensuring a refined standard. This includes managing the production schedule and overseeing all backend purchasing, receiving, and storage.
The ideal candidate will possess a technical understanding of batter science and scaling for volume. They must also be able to maintain strict standardization of recipes and ensure consistency in crumb structure and moisture content across various orders.
- Execute production of macarons, chocolates, cookies, and other luxury items to exacting standards.
- Directly manage vendor relationships and food cost variance.
To succeed in this role, the candidate must have:
- A thorough knowledge of batter science and scaling principles.
- Experience with recipe standardization and consistency control.
- Strong leadership skills, including direct oversight of BOH teams.
- Familiarity with inventory management and cost control.
