Ecco's second restaurant will focus on pinxtos bars in Spain, featuring local Chesapeake Bay fish and shellfish. The Executive Chef will oversee daily kitchen operations, support culinary vision, and ensure nightly service meets established standards.
The ideal candidate has 2-3 years of kitchen management experience, preferably in independent restaurants. Spanish cuisine experience is preferred. Key responsibilities include:
- Managing a small team of line cooks, prep, and dishwashers
- Effective labor and food cost management
- Purchasing and prep list management, following sourcing rubrics
Additional qualifications include ability to stand for 10-12 hour shifts, digital system proficiency (Google Suite, Tripleseat, scheduling platforms), and strong interpersonal communication skills.
