We are seeking a dynamic Production Cook to join our culinary team.
The ideal candidate will have experience in large-batch cooking, meat fabrication, and stock preparation.
Main Responsibilities:
- Prepare stocks, sauces, soups, and other foundational elements of the menu.
- Execute large-batch cooking for banquets using appropriate techniques (e.g., roasting, braising, steaming, etc.).
- Maintain cleanliness, organization, and proper labeling in all storage areas including walk-ins, dry storage, and prep areas.
Fundamental Requirements:
- Follow standardized recipes and production guidelines to ensure consistency and quality.
- Perform meat fabrication including portioning, trimming, and prepping proteins for events.
- Utilize bag and chill systems for safe food preparation and storage.
- Receive, inspect, and store food deliveries in compliance with safety and quality standards.
Detailed Specifications:
- Work collaboratively with kitchen staff and front-of-house teams to meet production timelines and event needs.
- Assist in the setup, breakdown, and cleaning of workstations and production areas.
- Demonstrate effective time management and prioritization to meet tight production schedules.
