*Position Summary:*
We are seeking a highly organized and experienced *Kitchen Manager* to oversee back-of-house operations in a *high-volume, fast-paced restaurant*. This role requires strong leadership, excellent communication, and a deep understanding of kitchen operations, food safety, and team management. The ideal candidate is a problem-solver who thrives under pressure, maintains high food quality standards, and ensures efficient, safe, and profitable kitchen operations.
*Key Responsibilities:Kitchen Operations:*
* Supervise and coordinate all kitchen activities and staff during service hours.
* Ensure smooth and efficient food preparation and service for high-volume output.
* Maintain kitchen workflow, inventory, and production schedules.
* Monitor and manage prep levels, batch cooking, and station readiness.
*Staff Management:*
* Hire, train, schedule, and supervise BOH staff, including line cooks, prep cooks, and dishwashers.
* Provide ongoing coaching, performance feedback, and disciplinary actions when necessary.
* Foster a positive, team-oriented kitchen culture with a focus on productivity and professionalism.
*Food Quality & Safety:*
* Ensure all food is prepared according to recipes, portioning, presentation, and quality standards.
* Maintain strict compliance with health, sanitation, and food safety standards (HACCP, ServSafe, etc.).
* Conduct regular line checks and kitchen inspections.
*Inventory & Cost Control:*
* Manage ordering, receiving, and inventory of food and kitchen supplies.
* Monitor food and labor costs to meet budgetary goals.
* Reduce waste and improve efficiency through effective portion control and prep planning.
*Equipment & Maintenance:*
* Oversee cleanliness and maintenance of kitchen equipment and facilities.
* Schedule repairs and preventative maintenance as needed.
*Qualifications:*
* Minimum *3-5 years of experience* in a kitchen leadership role, preferably in a *high-volume restaurant*.
* Strong culinary knowledge and experience in multiple cooking techniques.
* Proven ability to lead a team in a fast-paced environment.
* Excellent time management, communication, and organizational skills.
* Working knowledge of inventory, cost control, and food safety regulations.
* ServSafe or equivalent certification preferred.
* Bilingual (English/Spanish) a plus.
*Physical Requirements:*
* Ability to stand for extended periods (8+ hours), bend, lift up to 50 lbs, and work in a hot environment.
* Willingness to work evenings, weekends, and holidays as needed.
