Job Summary
We are seeking an experienced and motivated Terminal Chef to support our culinary operations and ensure high standards of food quality, safety, and service. Working closely with the Executive Chef and Executive Sous Chef, you will supervise day-to-day kitchen activities, lead and train staff, and help maintain an efficient and organized kitchen environment.
Key Responsibilities
- Assist the Executive Chef and Executive Sous Chef in planning, coordinating, and supervising daily kitchen operations.
- Lead, mentor, and support cooks and assistant cooks; delegate tasks to ensure smooth workflow.
- Ensure all prepared food items are properly labeled, dated, and rotated to maintain freshness and food safety.
- Oversee buffet setup, cooking times, station readiness, and presentation standards.
- Maintain high standards for food quality, taste, texture, consistency, and portion control.
- Supervise cooking techniques and preparation methods to ensure optimal results.
- Monitor inventory, assist with ordering, receive deliveries, and manage proper stock rotation (FIFO).
- Enforce food safety, sanitation, and HACCP protocols, ensuring compliance at all times.
- Maintain equipment cleanliness and report any required repairs or maintenance.
- Manage kitchen operations during service to ensure efficiency, speed, and accuracy.
- Assist with menu development, daily specials, and seasonal dishes; contribute ideas for cost control and waste reduction.
- Train staff on new recipes, techniques, equipment, and kitchen procedures.
- Collaborate closely with front-of-house teams to ensure smooth service and strong communication.
- Respond calmly and effectively to emergencies or unexpected situations; support crisis and incident management.
Qualifications Required
- Proven experience as a Chef de Partie, Sous Chef, or similar supervisory kitchen role.
- Strong knowledge of culinary techniques, food safety regulations, and HACCP standards.
- Ability to lead, coach, and motivate kitchen staff in a fast-paced environment.
- Excellent communication, organizational, and problem-solving skills.
- Good organizational skills.
- Self-motivated.
- Ability to prioritize and problem-solving ability.
- Able to work with minimal supervision.
- Strong interpersonal skills with positive attitude.
- Must be able to multitask and plan ahead.
- High sense of responsibility and attention to detail.
- Undertake other jobs assigned by superior from time to time, such as covering duties for colleague during their break time.
- Able to obtain Transport Canada clearance for security pass (RAIC) to work at the airport.
Working Conditions
- Ability to stand for extended periods.
- Ability to lift up to 50 lbs.
- Tolerance for working in high-heat environments
- Must be flexible to work weekdays/weekends and statutory holidays.
- Must be available to work flexible shifts early morning/day/evening shifts
