Job Description:
We are seeking an experienced Sous Chef to assist the Head Chef in overseeing kitchen operations and leading the culinary team. The ideal candidate will have a strong background in both continental and Indian cuisines, with expertise in sandwich and salad preparation, sauces, kebabs, biryanis, and cold kitchen items (Hors d'oeuvres). The candidate should be willing to travel or relocate to Oshawa, and a valid G license is mandatory.
Key Responsibilities:
- Assist the Executive/Head Chef in daily kitchen operations and menu planning.
- Supervise and train junior kitchen staff including Commis Chefs.
- Oversee and prepare a wide range of dishes including:
- Continental Cuisine (pasta, steaks, grills, etc.)
- Sandwiches and Salads (including dressings and cold platters)
- Indian Cuisine (curries, tandoori, regional specialties)
- Biryani & Kebabs (Hyderabadi, Lucknowi, etc.)
- Hors d'oeuvres and Canapés (for banquets and catering)
- Sauce Preparation (Indian Sauces)
- Manage Commissary Kitchen operations including bulk prep and portion control.
- Ensure high standards of food quality, taste, hygiene, and presentation.
- Monitor kitchen inventory and coordinate with purchasing for ingredients and supplies.
- Maintain kitchen cleanliness and adhere to all health and safety regulations.
- Depending on business needs, should be willing to travel across Ontario in case of catering or events.
Requirements:
- Culinary diploma or degree from a recognized institute.
- Minimum 3 years of experience as a Sous Chef or Senior Chef de Partie.
- Proficient in both Indian and Continental cuisine.
- Strong leadership, communication, and team management skills.
- Ability to work in a fast-paced environment and handle multiple tasks.
- Good understanding of kitchen budgeting, food costing, and inventory management.
