Prep Cook

Job Brief

Alice B. is a restaurant by Mary Sue Milliken and Susan Feniger in Palm Springs, with a tight knit group of dedicated individuals that are passionate about food, beverage, and service. We are looking for professional prep cooks to prepare food to the exact chef's specifications and to set up stations for the menu. Line cook duties will consist of assisting the executive and sous chef with their daily tasks. The successful candidate will play a key role in contributing to our customer satisfaction and can work well with a team.

Responsibilities

• Set up and stock prep station daily with clean tools, sanitizer buckets, and backup supplies.
• Wash, chop, and portion produce, proteins, and garnishes according to prep lists.
• Prepare sauces, stocks, dressings, and batch recipes to chef's specifications.
• Label, date, and rotate all product properly (FIFO).
• Assist with receiving deliveries; check quality, store immediately, keep walk-ins organized.
• Follow cooling and storage standards (below 70°F in 2 hours, 40°F in 4 hours).
• Keep prep station and shared spaces clean, sanitized, and organized at all times.
• Support line cooks and pastry with overflow prep as needed.
• Break down prep area at end of shift: consolidate, label, wrap, sanitize surfaces.

Requirements

• 1–2 years kitchen experience preferred, but training is provided.
• Solid knife skills and basic cooking knowledge.
• Ability to lift up to 50 lbs., stand and move throughout shift.
• Ability to stay organized and complete prep list efficiently.
• Team player willing to jump in where needed.
• Available weekends, nights, and holidays.
• Commitment to sanitation and safety standards.
