POSITION SUMMARY

The Production Supervisor – Cold Food oversees daily cold-food production to ensure all Abby's Catering menu items meet quality, safety, and airline presentation standards. This role ensures on-time and accurate order fulfillment, HACCP compliance, and smooth shift operations within a 24/7 environment.

Supervises Cold Food Production Associates and leads a high-accountability team focused on quality, productivity, food safety, and a clean, organized work area.

Reports to: Production Manager
Direct Reports: Cold Food Production Associates

SAFETY AND COMPLIANCE

  • Follow all food safety, HACCP, and traceability requirements daily. 
  • Maintain accurate logs, review data for completeness, and document any deviations. 
  • Enforce personal hygiene practices and compliance with all food safety and sanitation programs. 
  • Ensure all cold-room operations meet airline regulatory standards. 
  • Maintain a safe, hazard-free workspace and enforce safety procedures at all times.
     

EQUIPMENT AND MAINTENANCE SUPPORT

  • Oversee proper handling, organization, and sanitation of food-production equipment. 
  • Ensure equipment, tools, and workspaces are cleaned, sanitized, and maintained. 
  • Report equipment issues promptly and ensure follow-through on corrective actions. 
  • Support continuous improvement in workspace efficiency and workflow.
     

DUTIES

  • Lead, coach, and supervise Cold Food Associates to achieve high performance. 
  • Conduct daily shift start/end meetings and communicate production priorities. 
  • Ensure all products meet airline specifications, quality standards, and portion requirements. 
  • Deliver all finished products on time to meet Kitchen Departure Times for all flights. 
  • Reduce waste through proper inventory rotation (FIFO) and strict portion control. 
  • Assist in providing food safety training to front-line staff. 
  • Monitor labor costs and control overtime through proactive shift management. 
  • Maintain a clean, safe, and organized cold-food production area. 
  • Promote teamwork and a positive work environment. 
  • Complete additional tasks as assigned by leadership.

Requirements

JOB REQUIREMENTS

  • Ability to work in a cold environment (36°F) for extended periods. 
  • Willing to work rotating shifts, holidays, weekends, and overtime as needed. 
  • Strong leadership, communication, and organizational skills. 
  • Bilingual English/Spanish (verbal communication required). 
  • Must be legally authorized to work in the U.S. (no sponsorship). 
  • Ability to read/interpret loading instructions, diagrams, and menu specs. 
  • Proficiency with Microsoft Office. 
  • Excellent knowledge of food hygiene standards; Food Handler Certificate required. 
  • Strong attention to detail and high accuracy standards. 
  • Reliable, proactive, and able to work independently. 
  • High School Diploma or equivalent required. 
  • Culinary Arts education preferred. 
  • Airline catering experience a plus.

WORK ENVIRONMENT 

  • Cold-room production environment (36°F). 
  • Fast-paced, time-sensitive operation. 
  • Requires standing for long periods and moderate to heavy lifting. 
  • Exposure to food-production equipment, carts, and high-traffic areas.
