Nestled below street level, the restaurant offers an immersive, transportive experience rooted in Japanese tradition and craftsmanship. Position Summary

The General Manager is responsible for the overall leadership, operational excellence, and financial performance of Hiroki-San. This role oversees all front-of-house operations while working in close partnership with culinary leadership to ensure service, hospitality, and execution align with the restaurant's vision and standards. The General Manager serves as a culture leader, brand ambassador, and primary liaison between ownership, management, and the restaurant team.

Key Responsibilities

  • Operational Leadership
    • Oversee all daily restaurant operations, ensuring smooth and consistent service across all meal periods
    • Uphold and enforce brand standards, service procedures, and operational systems
    • Partner closely with the Executive Chef and BOH leadership to ensure seamless coordination between kitchen and service
    • Lead pre-shift meetings, service training, and continuous operational improvements
  • Team Leadership & Development
    • Recruit, hire, train, and develop front-of-house managers and service staff
    • Create and manage schedules to ensure appropriate coverage and labor efficiency
    • Foster a positive, accountable, and high-performance team culture
    • Conduct performance evaluations and provide ongoing coaching and feedback
  • Guest Experience
    • Set the standard for exceptional hospitality and service consistency
    • Actively engage with guests and handle feedback or concerns with professionalism and care
    • Ensure every guest interaction reflects Hiroki-San's commitment to elevated dining and service
  • Financial Management
    • Manage sales performance, labor costs, and operating expenses
    • Partner with ownership on budgeting, forecasting, and financial reporting
    • Monitor inventory, purchasing, and cost controls to meet financial goals 
  • Compliance & Safety
    • Ensure compliance with all health, safety, labor, and sanitation regulations
    • Maintain a clean, safe, and organized work environment
    • Enforce company policies and procedures consistently
  • Brand Representation & Growth
    • Support marketing initiatives, special events, and collaborations within Book Tower
    • Represent Hiroki-San professionally within the Detroit hospitality community
    • Identify opportunities to enhance guest satisfaction, efficiency, and long-term growth

Qualifications

  • Proven experience as a General Manager or senior restaurant leader in a full-service or fine-dining environment
  • Strong leadership, communication, and organizational skills
  • Solid financial acumen with experience managing labor and operating budgets
  • Ability to thrive in a fast-paced, detail-driven dining environment
  • Flexible availability, including evenings, weekends, and holidays
