Kitchen Manager – GCBC Sunset Beach
Green Cheek Beer Company is an 8-year-old Orange County based craft brewery with multiple awards at the national and international level. We are committed to diversity, high quality beer and friendly guest experience. We opened our second location in Costa Mesa in January of 2020, third location in Sunset Beach in September 2023 and fourth location in Oceanside in March 2024, with more locations on the way.
The ideal candidate will have 3+ years of Kitchen Management experience, have a true passion for food, hospitality and teamwork, a strong willingness to learn and teach, and have a keen eye for detail and organization.
Qualifications:
● Minimum 3 years prior experience as a Kitchen Manager, F&B Manager, or Head Chef, or in a similar role
● Strong communication skills - both written and oral
● Familiar with Google Docs and Google Sheets
● Experience writing schedules.
● Prior labor and food cost management experience
● Highly organized and detail oriented
● Experience with planning menus for special events this location has event space and continues to increase event sales (menus). The KM must be able to work on the daily functions of the kitchen along with coordinating and direct staff for events during open business hours.
●The events are growing, experience in organizing the necessary kitchen staff and menu for each event, working closely with the GM and Event Manager.
●Maintain an excellent track record of budgetary management and exceeding guests' expectations.
●Document and review all records for each catering event and analyze what can be done to improve booking sales.
●Proven knowledge and certification of local kitchen sanitation and safety standards/regulations
● Dependable, reliable, and flexible to work mornings, nights, and weekends.
Responsibilities
● Inspect all prep, production, and storage areas daily to ensure that local health, safety, and company regulations are always adhered to.
● Be able to work at all stations.
● Ensures all food production is of high quality and is efficiently prepared.
● Ensures all recipes and line builds/portion sizes are being adhered to and mindfully prepared, focusing on quality and consistency.
● Conduct daily inventory of all food products to ensure accurate orders and preplists
● Responsible for the continued training/development and coaching all kitchen staff.
● Conduct daily line checks to ensure proper hot and cold holding temperatures and overall food quality.
● Maintain weekly food sales reports.
● Scheduling of kitchen staff
● Interviewing/hiring/onboarding of new employees
● Disciplinary Actions: Conduct, document, and suggest disciplinary verbal and written warnings and terminations.
● Conduct, maintain, and supervise the completion and editing of all kitchen admin and systems including but not limited to order guides and prep lists, waste logs, recipe/menu cards, weekly food sales reports, taste/temp logs, invoicing, end of month inventories, etc.
