Core Function:
Responsible for the provision of quality food for community customers in accordance with sanitation regulations
Qualifications:
Completion of Chef Training or diploma or diploma/certificate/apprenticeship in Culinary Management, Cook, Food and Nutrition or equivalent experience in batch/institutional cooking
Current Food Handler Safety Certificate
Minimum 3 years proven institutional / banquet cooking experience
Practical and theoretical knowledge of quantity food production, and knowledge of sanitation and safety standards for food services area
Experience cooking Chinese cuisine strongly preferred.
Ability to communicate orally and in writing, in both English and Chinese
Responsibilities:
Prepares and cooks batch food and snacks according to pre-determined requirements and recipes, taking into account palatability and appetizing appearance. Adjusts dishes to accommodate for specific clinical diets as needed.
Pre-prepares food items according to set menus (regular, vegetarian, puree, and frozen).
Ensures food is cooked, stored and served at proper temperatures. Inspects and tastes food for quality. Labels and retains food samples
Accurately portions and serves food to clients
Provides input into menu planning
Coordinates work routines with other cook(s) and kitchen staff to ensure smooth operation
Advises managers on changes in food ingredients to ensure nutritional labels are accurate.
Provides input and estimate on food ingredients, supplies and costs. Assists in ordering and receiving food supplies
Ensures a high standard of cleanliness and sanitization. Complies with public health and other legislative regulations Follows all food handling guidelines and monitors critical points to ensure food safety.
Cleans work surfaces, utensils and equipment. Maintains production areas, store rooms and refrigeration areas in a clean and organized condition. Assist in waste disposal.
Logs temperature of refrigerator/freezer and food temperature
Monitors and maintains inventory of food, supplies and equipment. Provides timely report to supervisor on issues, discrepancies, equipment failures, etc.
Responsible for stock rotation, ensuring items are used before the expiry date
Secures work area by locking doors, freezers, etc.
Cooks for community banquet when required.
Complies with risk management policy for health and safety
Keeps up-to-date with developments and best practices in the field
Other duties as assigned
Physical Demands/Working Condition:
Considerable standing, walking and lifting throughout the day
Evening and weekend when required
Exposed to heat, humidity and food waste
