Schedule: Monday–Friday, 6:30 AM–3:30 PM (Occasional OT based on pilot/trial needs)
Reports To: VP of Operations
American Custom Meats is seeking a detail-driven R&D Data Coordinator to support our Research & Development team by capturing, validating, and maintaining accurate formulation and product data. This role plays a critical part in ensuring all recipes, specifications, and trial documentation are organized, accurate, and audit-ready. The ideal candidate thrives in a fast-paced environment, is highly organized, and has a strong sense of ownership and follow-through.
Key Responsibilities- Enter and maintain recipes, formulations, batch sheets, and product specification data
- Manage version control, standard naming conventions, and document archives
- Capture allergen, nutritional, and labeling data; assist with label creation as directed
- Document pilot trials, including yields, times/temps, deviations, and supporting photos/scans
- Validate data accuracy through routine spot checks and reconciliations
- Update ingredient and packaging costs; support cost summaries and variance tracking
- Maintain organized digital folders and follow document-control SOPs
- Prepare data packets and basic reports for leadership and cross-functional teams
- Support the R&D Supervisor with presentations, trial preparations, and customer-facing materials
- Ensure all data aligns with GMP, HACCP, and internal compliance requirements
- 1+ year of experience in data entry, documentation, or administrative support (food/CPG preferred)
- Strong Excel skills (VLOOKUP/XLOOKUP, filters, data validation, pivot tables)
- High accuracy, strong typing speed, and excellent attention to detail
- Ability to read and understand formulations, weights/measures, and basic process specs
- Clear, effective communication and consistent follow-through
- Experience with ERP/PLM systems (NetSuite, SAP, Oracle) or document control environments
- Familiarity with GMPs, HACCP, allergens, and traceability
- Experience with nutrition or labeling tools is a plus
- Bilingual English/Spanish preferred
- Highly organized, fast-paced, and proactive with strong ownership
- Office and production floor exposure
- Requires use of PPE (hairnet, gloves, smock, etc.)
- Ability to work in cold room environments during trials
