Prep Cook – High Volume Fine Dining

Position Overview:
We are seeking a highly skilled and motivated Prep Cook to join our fast-paced, high-volume fine dining kitchen. The ideal candidate is precise, efficient, and deeply knowledgeable in culinary fundamentals, including advanced knife work, butchery, and proper food handling. This role is essential to the smooth execution of service, ensuring our chefs receive consistent, high-quality mise en place every day.

Key Responsibilities

• Execute daily prep lists with accuracy, speed, and attention to detail
• Demonstrate elite knife skills, including precise cuts, uniformity, and speed
• Perform basic and advanced butchering, including fish filleting, poultry breakdown, and portioning proteins
• Prepare stocks, sauces, marinades, dressings, and other foundational components
• Maintain cleanliness, organization, and labeling standards in all prep areas
• Follow strict food safety, sanitation, and storage protocols
• Support line cooks and chefs as needed during peak periods
• Work efficiently in a high-volume, fast-paced environment while upholding fine-dining standards
• Communicate clearly with the culinary team to ensure smooth workflow and consistency
• Assist with deliveries, inventory rotation, and proper storage of ingredients

Qualifications

• Minimum 2+ years of professional kitchen experience, preferably in high-volume or fine dining
• Exceptional knife skills and understanding of proper cuts and techniques
• Strong knowledge of butchery, protein handling, and safe food practices
• Ability to stay calm, organized, and focused under pressure
• Familiarity with prep systems, batch cooking, and structured mise en place
• Strong work ethic, punctuality, and dedication to quality
• Ability to stand for long periods, lift up to 50 lbs, and work in a physically demanding environment
• Team-oriented mindset with excellent communication skills

Job Types: Full-time, Part-time

Pay: From $19.00 per hour
